What is the program about?
The Pastry Specialist Certificate is a two semester program designed to provide students the knowledge and skills necessary to be employed in a commercial retail bakery with a focus on pastry, confections, cake production and decoration, and candy. This certificate may be obtained after the completion of the Food Production Specialist Certificate.
Program Outcomes
- Take the National Restaurant Association ServSafe exam within two hours and receive a 70% or above accuracy.
- On a practical exam within two hours students must produce a baked item and discuss the science behind it at 70% or above accuracy.
- On a Final Practical, students will plan, develop, and present a sugar sculpture with candies/confections and explain the scientific techniques and processes involved at 70% or above accuracy
- Produce plated desserts at restaurant quality for 4 service events at 70% or above accuracy level.
