Baking and Pastry Arts

At the completion of your degree you should be able to perform the following:

Identify and apply the knowledge and skills necessary for hospitality and tourism operations

Demonstrate competence in the communication skills necessary for hospitality and tourism management

Formulate business decisions in hospitality and tourism management

  • BP 1. Apply principles of preparation and baking techniques to produce a variety of hot and cold pastry/bakery/confectionery/food products.
  • BP 2. Apply fundamentals of baking and pastry science to the preparation of products
  • BP 3. Pair gourmet coffee and tea with a variety of baked goods.
  • BP 4. Apply fundamentals of confectionery science to the preparation of products.
  • BP 5. Perform mathematical functions related to pastry/baking/confections.
  • BP 6. Perform sales floor duties using a variety of marketing styles and demonstrate an understanding of quality customer service.
  • BP 7. Demonstrate the operation of pastry/baking/confection equipment safely and correctly.

 

Culinary Arts

At the completion of your degree you should be able to perform the following:

  • C 2. Become familiar with varieties of alcoholic and non-alcoholic beverages and explain laws related to responsible alcohol service.
  • C 3. Perform mathematical functions related to food.
  • C 4. Apply principles of preparation and cooking techniques to produce a variety of hot and cold food products.
  • C 5. Develop knife skills to produce a variety of cuts and demonstrate the operation of kitchen equipment safely and correctly.
  • C 6. Perform dining room duties using a variety of styles and demonstrate an understanding of quality customer service.
